Chris Bianco started his first job at a nearby pizzeria when he was 13 years old. After that, he left high school and started training to make pizza. At Mike’s Deli in the Bronx, he learned the skills needed to make mozzarella.
Chris won two tickets to anywhere in the United States in 1985, so he chose to go to Phoenix. Then he finally decided to settle there because he fell in love with Phoenix. He began by selling his Mozerella home outside of his residence; then, he started selling it to surrounding Italian restaurants.
Chris’ life changed when he moved to Phoenix and started supplying mozzarella cheese to a pizzeria. He had the chance to learn about restaurant operations before trying his hand at making pizza in a wood-fired pizza oven.
While baking pizza in a wood-fired oven at the Cosco catering event, one of the attendees offered him a little nook in the corner of his shop to sell pizza. He started selling Margheritas, Marinaras, and a specialty corner pizza from the grocery store to customers. Soon his pizza gained a lot of popularity. Then, in 1988, he decided to travel to Italy to perfect his skills as a pizza maker.
He took a break and studied pizza making for six months. Settling in Santa Fe, New Mexico, he spent three years working in an Italian restaurant upon his return to the United States. Eventually, back in Phoenix in 1994, he founded Pizzeria Bianco in Town & Country.
